Crunchy Topped Cod Loin
This is so easy to do and a really great way to enjoy a piece of cod loin, or any other white fish in fact.
You will need;
4 – 100 Gm Cod Loins
50 Gm - Wholemeal Fresh Breadcrumbs
2 tbsp - Fresh Parsley (finely chopped)
2 – Medium Tomatoes (sliced)
The Juice and Zest of 1 Lime
2 teaspoons - Sunflower Oil
Salt and Freshly Ground Black Pepper to taste
Lay the cod loins in an oven proof tray or dish and arrange the slices of tomato on top of the cod.
Put the breadcrumbs in a bowl, then mix in the parsley, the juice and zest of the lime, sunflower oil and a little salt and pepper all together in the bowl.
Then spread evenly over the top.
Pre-heat the oven to 200 degrees and bake for 30 minutes. (if you are using other fish or fillets times may vary)
It’s as simple as that.
Serve with seasonal vegetables.
